PULIGI ESI (PAPAYA PUDDING) | |
1/2 c. shortening 2 eggs 1 1/2 c. sugar 2 c. diced ripe papaya 3 c. flour 2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. ginger 1/2 tsp. nutmeg 2 tbsp. water 1 tsp. lemon juice 1 c. raisins Cream shortening and sugar, add eggs one at a time, beating well after each addition. Add papaya and beat well. Sift dry ingredients together and add with water and lemon juice. Fold in raisins. Pour into oiled and floured 12 x 9 x 2 inch pan. Bake at 325 degrees for 45-50 minutes. Yield: 12 servings. Serve with custard sauce. |
