PAPAYA WALDORF SALAD 
3 papayas, peeled
1 c. diced red apples (leave skin on)
1 c. sliced celery
1/4 c. raisins
1/2 c. coarsely chopped walnuts
Ginger Dressing
Fresh spinach leaves, trimmed

Cut one of the papayas in rings 1/2 inch thick, remove the seeds. Cover and chill. Seed and cube remaining papayas. In large bowl combine papaya cubes, apple celery and raisins, chill. Toss with Ginger Dressing and walnuts. Arrange spinach leaves on individual plates. Place rings of papaya on each plate. Top each ring with papaya mixture
