MINI CHICKEN PIZZAS 
Great recipe for kids to make! Leftover rotisserie chicken works great.

1 lb. boneless chicken breasts (cooked; diced or shredded)
6 English muffins, cut in halves
1 cup prepared Alfredo sauce
green, red and yellow peppers
sliced onion
shredded Mozzarella cheese

Heat oven to 450°F.

On a plain cookie sheet, place English muffins halves. Put a thin layer of Alfredo sauce on each muffin. Place diced cooked chicken on each muffin. Place peppers and onions next. Sprinkle Mozzarella cheese on top.

Bake until cheese is lightly golden brown and bubbly. Watch carefully!

Makes 12 mini pizzas.
