AUTUMN FISH STEW | |
1 lb. fresh or frozen cod or haddock 1 med. onion, diced 1 (16 oz.) can tomatoes 2 med. potatoes, peeled and diced 1 tbsp. salad oil 1 1/2 tsp. salt 1/2 tsp. basil 1/4 tsp. pepper 1/4 tsp. sugar 1/4 tsp. thyme (if desired) Saute onions in salad oil and mix all ingredients, except fish. Simmer until potatoes are tender. Add cubed fish and simmer until fish flakes. |
