SWEET POTATO SOUFFLE 
3 c. cooked yams or sweet potatoes (more or less)
3/4 c. brown sugar (or substitute some Sweet & Low for part of sugar)
2 eggs, beaten
1/2 stick butter, melted (save some for topping)
3/4 c. milk or orange juice
1/2 tsp. nutmeg
1 tsp. cinnamon

Mash potatoes and add all ingredients. Put in greased casserole pan and bake 375 degrees for 30 to 45 minutes. Can be served like this or sprinkle on top this mixture:

1/3 c. brown sugar
3/4 c. crushed corn flakes or whatever cereal you have
1/2 c. chopped pecans
1/4 c. butter (melted)

Bake 10 minutes longer.
