AU GRATIN POTATOES 
2 pkgs. frozen, chopped potatoes (O'Brien is in the name)
2 pkgs. Velveeta shredded cheese (add another pkg. for more cheesy taste)
2 c. milk, perhaps more
1 lg. onion, chopped
1/8 to 1/4 c. chopped parsley
Pepper, garlic powder perhaps, Nature's seasoning
1/4 c. butter or substitute
1 sm. jar pimento

Saute the onion in the butter; add the frozen potatoes, parsley, pimento, spices and some water to help the potatoes thaw, when the water has evaporated, add the milk and cheese, stir and heat, do not boil. Place in buttered baking dish; sprinkle with corn flake crumbs, if desired. Bake at 350 degrees for about 30 minutes.

One could add a small amount of chopped or shredded carrots and (or) celery with the onion for additional color or taste.
