SWEET POTATO ROLL 
1 c. mashed, unsweetened potatoes (can use canned sweet potatoes or fresh)
5 c. flour
1/2 c. sugar
1/2 c. melted shortening
1/2 c. water (dissolve yeast in water)
2 pkg. yeast
3/4 c. water
1 egg
2 tsp. salt

Mix and cover; let stand for 2 hours.

Punch down and roll out dough, cut into rolls and put on pastry sheet. Let rise for 2 hours.
