SWEET POTATO SOUFFLE | |
2 c. mashed sweet potatoes 2 eggs, beaten 1/2 c. chopped pecans 1/2 c. brown sugar 3/4 tsp. salt 1/2 c. raisins 1 tsp. vanilla Mash sweet potatoes (can use 1 large can potatoes from store and mash). Add eggs and mix well. Add remaining ingredients. Pour into 8-inch greased baking dish. Bake at 350 degrees for 30-35 minutes. Remove from oven and put marshmallows on top. Bake until brown. Great for holiday dinners. |
