BANANA WALNUT CAKE 
2/3 c. ripe banana, mashed with a fork
1/2 c. butter, softened
3 lg. eggs
3/4 c. water
2 c. unbleached white flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped walnuts
1/2 c. raisins

In a mixing bowl beat together mashed bananas and butter until creamy. Add eggs and water; beat well. Stir in flour, baking powder, baking soda and cinnamon. Beat until smooth. Add chopped walnuts and raisins. Spoon batter into an oiled and floured 9"x13" baking pan. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes.
