BANANA-WALNUT BUNDT CAKE 
1 3/4 cups sugar
3/4 cup shortening
3 cups all-purpose flour
2 cups mashed bananas (about 4)
1/2 cup yogurt (plain)
1 tbsp. baking powder
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. baking soda
4 large eggs
2 cups chopped walnuts (I use black walnuts)

Preheat oven to 350°F. Grease and flour 10-inch tube pan.

In a large bowl, with mixer at low speed, beat sugar and shortening just until blended. Add remaining ingredients, except walnuts. Beat until well mixed. Increase speed to high and beat 2 minutes. Stir in walnuts.

Bake at 350°F for 65 to 70 minutes. Cool cake 10 minutes in pan. Remove to wire rack.
