VERSATILE GARDEN COOKIES 
1/2 c. shortening
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1 c. either applesauce, cooked, mashed pumpkin, or grated zucchini
2 c. flour
1 c. raisins
1/2 c. chopped nuts

If using pumpkin, I add 1/4 teaspoon ginger to the cinnamon and cloves.

Cream shortening and sugars. Add egg, soda, salt and spices, zucchini (or pumpkin or applesauce), flour, raisins and nuts. Bake at 325 degrees for about 15 minutes. Makes about 3 dozen soft cookies.
