TOM'S POTATOES 
3 tbsp. butter
3 lg. baking potatoes, peeled, diced & boiled
1 1/4 c. grated Monterey cheese
1 1/4 c. grated cheddar cheese
2/3 c. diced tomato
2 tbsp. minced onion
2 tbsp. chopped green onion
Salt
1/2 c. diced avocado
1/2 c. sour cream

Melt butter in skillet. Add diced potatoes and cook until browned and crisp, stirring frequently. Add cheese, tomato and onion and stir until cheese melts. Season with salt. Gently mix in avocado. Top with sour cream and serve.
