FISH FRY BATTER 
2 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
1 1/2 to 2 lbs. fish fillets (Bluegills or Panfish)

Beat eggs and milk together until well-blended. Add flour and salt; stir until batter is smooth. Add additional milk to thin batter. Dip fillet in batter; fry in oil at 375 degrees until crisp.
