THE HAGGARD CAKE 
CAKE (no eggs or shortening) :
2 c. flour
1 1/2 c. sugar
Dash of salt
2 tsp. baking soda
1 (#2) can (15 oz.) crushed pineapple and juice

Mix all together with a spoon and pour into a greased and floured pan, about 9x12 inches. Bake at 350 degrees in preheated oven 30-35 minutes. Leave in pan. While baking, make icing.

ICING:

1 1/2 c. sugar
1 stick butter
1 sm. can evaporated milk
Dash of salt
1 c. coconut
1 c. pecans, cut fine
1 tbsp. vanilla

While cake is baking, mix sugar and milk and butter in a saucepan and boil 2 minutes. Add the coconut, pecans, and vanilla, dash of salt. Pour over the cake while both are warm. When cake cools, cover with foil. Makes approximately 12 generous servings. Very rich and gooey!
