SHRIMP SCAMPI 
3 cloves garlic
1 1/2 lbs. shrimp
1 tbsp. butter
3 tbsp. oil
Salt & pepper
1 tbsp. lemon juice
2 tbsp. chopped fresh parsley

Mince garlic. Shell and devein shrimp, leaving tails on. In large pan, melt butter in the oil over medium-high heat. Add shrimp and cook, stirring until shrimp is cooked about 5 minutes. Stir in garlic and cook 30 seconds. Remove from heat. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, lemon juice and parsley and toss shrimp. Serve immediately.
