MY FAVORITE LEMON PIE 
1 1/2 c. sugar
1/4 c. plus 2 tbsp. cornstarch
1/4 tsp. salt
1/2 c. fresh lemon juice
1/2 c. cold water
4 lg. egg yolks, well beaten
2 tbsp. butter
1 1/2 c. boiling water
1 tsp. lemon peel, grated

In pan combine sugar, cornstarch and salt. Mix together well. Add lemon juice, cold water and egg yolks. Stir until smooth. Add butter. Gradually stir in boiling water. Bring to a boil, stirring constantly. Boil 2 or 3 minutes. Add a few drops of yellow food coloring (optional). Remove from heat. Stir in peel. Pour into prepared crust.

TOP WITH MERINGUE:

4 lg. egg whites
1/4 tsp. cream of tartar
1/2 c. sugar

Beat until stiff. Bake 6 to 8 minutes at 400 degrees until golden brown.
