PASTA SALAD | |
2 c. fresh or frozen snow peas (do not cook) 2 c. broccoli flowerets 2 1/2 c. cherry tomato halves 1 diced bell pepper 1 can whole pitted ripe olives, drained and sliced 2 c. fresh mushrooms, sliced 4 or 5 green onions, diced 1 (8 oz.) pkg. tortellini, either stuffed or plain 1 pkg. Good Seasonings (Italian) PASTA DRESSING: 1/3 c. red wine vinegar 1/3 c. vegetable oil 1/3 c. olive oil 2 tbsp. chopped fresh parsley 1 tsp. dried whole dillweed 2 tsp. dried whole basil 1/2 tsp. dried whole oregano 1 1/2 tsp. dijon mustard Combine all ingredients in a jar, and cover tightly. Shake vigorously until well mixed. Yield 1/4 cup dressing. Combine snow peas, tomatoes, mushrooms, sliced green onions, bell pepper and olives. Cook pasta according to package directions, drain. Add Good Seasonings to hot, drained pasta. Let cool slightly. Add salad dressing and toss well. Chill several hours before serving. |
