OVEN - FRIED MUSTARD CHICKEN 
1/3 c. fine bread crumbs
1/3 c. flour
1/4 tsp. paprika
1/3 c. Dijon mustard
1/4 tsp. each salt & pepper
1 tbsp. butter
4 boneless chicken breast halves
2 tbsp. water

Preheat oven to 425 degrees. Combine bread crumbs, flour and paprika. Combine mustard, salt, pepper and water. Melt the butter.

Line a shallow pan with foil and spray with nonstick spray. Dip the chicken in mustard mixture, then coat them with crumb mixture. Put in pan. Drizzle butter over chicken. Bake 15 minutes or until cooked through.
