SKILLET CASSEROLE 
1 lb. ground chuck
2 or 3 med. zucchini squash, sliced or cut in sm. chunks
1/2 c. or more grated Cheddar cheese
1 tsp. salt
1/2 tsp. black pepper
1 bell pepper, sliced thin
1 med. onion, sliced thin
2 lg. tomatoes, peeled and cut in chunks
Pinch of oregano (optional)
2 1/2 c. cooked rice

Brown beef chuck in a large skillet. Pour off excess grease, and add the rest of the ingredients except the cheese. Stir together and cover pan. Lower the heat and let simmer until vegetables are tender. Top with grated cheese and cover until cheese melts. Serve over rice. Or add rice to meat and vegetables before the cheese. Topping for an easy one-dish meal. 6 servings.
