COCONUT SHEET CAKE 
2 c. sifted cake (plain flour)
1 1/3 c. sugar
1 tsp. salt
3 tsp. double acting baking powder
1 tsp. vanilla
1/2 c. Crisco
2/3 c. milk
2 eggs
1/3 c. milk

ICING:

Bring to boil: 1 c. sugar 1 tsp. cornstarch 1/2 tsp. vanilla 14 oz. frozen coconut

Combine flour, sugar, salt and baking powder in a mixing bowl. Add Crisco and 2/3 cup milk. Mix for 2 minutes. Add eggs and 1/3 cup milk and vanilla. Beat for 2 minutes. Bake at 350 degrees in sheet pan for 30 minutes. Pour icing over cake while hot.

Icing: Bring to boil, then add 14 ounce frozen coconut and 1/2 teaspoon vanilla. Pour over cake while hot.
