LEMON BUTTER 
2/3 c. sugar
Strained juice of 2 lemons
Grated rinds of the 2 lemons (optional)
1/4 c. butter
3 eggs

Place sugar, lemon juice, rind (if used) and butter in saucepan. Beat eggs and add to this mixture. Cook over low heat very slowly, stirring constantly for about 20 minutes until it becomes thick and custard-like. Remove from heat and cool. Store in glass jar.
