DIANA'S POOR MAN'S CHILI | |
1 1/2 lb. ground beef (80/20 is best) 1 (15 oz.) can ranch style beans 1 (10 oz.) can Rotel with green chilies (medium heat) 2 tbsp. Menudo spice (Gebhardt) 1/2 cup beef broth (Swanson) 1 cup grated cheddar cheese In a 5-quart pot, brown ground beef and drain. Stir in ranch style beans, Rotel and Menudo spice. Bring to a boil, then add beef broth. Simmer for 30 minutes. Serve in a bowl, topped with cheddar cheese, by itself, or over cornbread or Fritos.
