ZUCCHINI JAM 
6 c. sugar
6 c. zucchini, peeled and ground
1 whole lemon, ground with zucchini
1 c. crushed pineapple, undrained
1/2 c. lemon juice
1 (6 oz.) pkg. orange gelatin or other fruit gelatin

Boil zucchini and lemon together until clear. Add crushed pineapple, lemon juice and sugar. Boil hard for 6 minutes. Remove from burner and add gelatin. Mix thoroughly and pour into sterile jars; seal with paraffin. Or use regular lids.
