CRABMEAT CASSEROLE 
1 lb. crabmeat
1 bunch broccoli
4 tbsp. butter
4 tbsp. flour
Salt and pepper to taste
2 1/2 c. milk
1 c. light cream
1/3 c. thinly sliced scallions
2 tbsp. chopped pimento
3 tbsp. slivered almonds

Heat butter in saucepan; stir in flour and salt. Saute while stirring for a minute or two. Gradually add milk and cream, stirring constantly, and cook over gentle heat until the sauce is smooth and has thickened. In the meantime, cook broccoli in water until tender and drain.

Fold crabmeat, scallions, and pimento into while sauce; season with pepper and more salt if needed. Arrange broccoli around edge of shallow baking dish. Fill center with spoon crabmeat and sauce. Bake at 375 degrees for 20 minutes or until hot and bubbly. Serve over English muffins with Mozzarella cheese.
