CHICKEN CACCIATORE 
2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 tbsp. olive oil
2 (14 1/2 oz.) cans stewed tomatoes
1 (6 oz.) can tomato paste
2 c. sliced mushrooms
1 c. sliced zucchini
1 tsp. basil, crushed
Hot cooked pasta

Brown chicken in oil 10 minutes, turning occasionally; drain. Add tomatoes, tomato paste, mushrooms, zucchini, and basil; salt and pepper to taste if desired.

Cover and simmer 25 minutes. Serve over pasta. Garnish with parsley if desired. Yield 4-6 servings. Preparation time, 5 minutes; cook time, 35 minutes.
