PEPPER JELLY 
1/4 c. chopped red or green hot pepper
3/4 c. chopped sweet green pepper
6 1/2 c. sugar
1 1/2 c. apple cider
1 bottle (6 oz.) liquid fruit pectin
Green or red food coloring

Grind hot and sweet peppers in food grinder using fine blade; mix well. Combine peppers, sugar and apple cider in heavy saucepan. Bring to rolling boil over high gas flame. Turn off flame and let set 5 minutes; add pectin. Stir in a few drops of green or red food coloring until jelly is desired color. Pour into hot, sterilized jelly glasses or jars leaving 1/8 inch head space. Seal. Process 5 minutes in boiling water bath. Makes 6 (8 ounce) jars.
