BEST EVER BANANA MUFFINS 
3 lg. bananas
3/4 c. sugar
1 egg
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. flour
1/3 c. melted butter

Mash bananas. Add sugar and slightly beaten egg. Add the melted butter. Combine the dry ingredients, add to the banana mixture and mix lightly. Spoon into well-greased muffin tins. Bake at 400 degrees for 15 to 20 minutes or until done. Makes 12 muffins.

Muffins came out great and were easy to make. Made a few of changes -- sprinkled the bananas before mashing with a squeeze of fresh lemon juice and added 1/2 teaspoon of nutmeg, 1 teaspoon vanilla extract, and 1/3 cup crushed almonds to the batter. Also, lightly sprinkled muffin tops with sugar before baking. 15 minutes of baking time was just right. Delicious!

The recipe says it all in the name! The Best Ever Banana Muffin! They turn out perfect every time, my only comment would be to keep a close eye on them, I've never cooked then for the recommended time. I take them out as soon as they're golden brown, usually five minutes early! Also I cook them on 375°F, I notice a little too much browning, but that's your preference, if you like a darker muffins, you can cook at 400°F! To acquire this! I would still take out early! Happy Baking!

Just finished making these and I added a 1/2 tsp. baking powder to the dry mix and cinnamon as well. Nuts and a brown sugar topping. Very fluffy and full of flavor! I do agree with the butter making them brown too fast. Maybe next time I'll try a lower temp for a longer time. It does make a great loaf too.

I added baking powder and walnuts. Came out light and fluffy! Not sure if the baking powder made a difference but I'm keeping it in just in case.

I just made this and it is great!!! I made mine into a loaf. I added 1/2 tsp. cinnamon and 1/2 vanilla and I love it!! I also made a buttercream frosting (3 3/4 cups confectioners sugar, 1/2 cup butter (softened), 3-4 tbsp. milk, 1 tsp. vanilla) for it. It goes great with my morning coffee. I will be making this again!!

I just made these amazing muffins! The recipe is perfect! I only had 2 semi-ripe bananas though but they still taste great! I added 1 tsp of cinnamon and 1 teaspoon of vanilla. And before putting them in the oven I sprinkled the tops with a pinch of brown sugar! And then cooked them at 400°F for 15 minutes. PERFECTION! I definitely recommend these yummy muffins!!!

Yum! I've made these twice now. I use gluten free Bob's Red Mill baking mix. They are not too sweet even with all the sugar - just traditional, very yummy muffins. The first time I accidentally used baking powder so they did not rise well (yet still tasted great). This time, perfection.
