PORTUGUESE CINNAMON ROAST 
5 lb. chuck roast
2 tbsp. ground cinnamon
4 c. water
6 lg. onions, quartered
8 carrots, cut in lg. slices
1 (28 oz.) can Italian tomatoes
3-4 cloves garlic, minced
1 c. cider vinegar
Salt and pepper to taste
8 potatoes, halved
1 lb. Chorico sausage
1 (6 oz.) can tomato paste + 2 cans water

Marinate roast in cinnamon, garlic, vinegar and water overnight. Next day simmer roast in marinade for 1/2 hour on low heat. Transfer meat to roasting pan. Add potatoes, onions, carrots, and sausage along with marinade.

Combine tomatoes, tomato paste and water and pour over everything in roaster. Cover and roast in 350 degree oven for about 3-4 hours.
