OVER THE FIRE READING ROUNDUP
COWBOY CHILI FOR 200+

10 c. onions, chopped
10 c. green pepper, chopped
10 c. celery, sliced
20 lbs. hamburger
5 (45 oz.) cans tomato juice
10 (15 oz.) cans kidney beans
10 (16 oz.) cans tomatoes
5 (15 oz.) cans tomato soup
30 tbsp. chili powder
5 tbsp. black pepper
10 tsp. salt
10 tsp. paprika

NOTE: All ingredients must be donated by the kids. So..what you get, goes into the chili. No two batches taste the same.

Brown hamburger and onions.

In very large, 20 gallon, pot mix together all remaining ingredients. To this mixture add browned hamburger and onions.

Transfer chili mixture to several large and deep (commercial variety, usually found in school kitchen) baking pans. (Steal pans when cook is not looking. You will need 4.) Cover pans with foil. Place in oven at 350 degrees for approximately 3 to 4 hours. Stir occasionally (as the "Great Reading Spirit" moves you.)

About 1 1/2 hours before serving, bribe custodian to build a bon fire outdoors. (This must be in a place the children cannot see.)

Transfer chili mixture to hobo stew cooker. Hang cooker over outdoor fire 1/2 hour before serving. (Kids will never know you didn't cook chili entire time over open fire.)

Serve chili amongst smoke and fire and all will think it's the best they have ever eaten.
