HOOSIER CHILI 
2 lbs. lean ground meat (beef or turkey)
1 qt. tomatoes
1/2 tbsp. black pepper
1 tbsp. chili pepper (add more to taste)
1 pinch crushed red pepper (optional for very hot taste)
1 qt. tomato juice
3/4 c. onion, chopped
1/4 tsp. salt
2 (15 oz.) cans kidney beans
2 c. macaroni or spaghetti (optional)

In a large kettle or Dutch oven brown the meat and gradually add chopped onion. After blending meat and onion, stir in tomato juice and tomatoes. Season with salt, pepper and chili powder. Crushed red pepper may be added at discretion and compassion of cook for consumers! Cover kettle, bring to a boil, then reduce heat and simmer for 1 1/2 to 2 hours. Add kidney beans just before removing kettle from heat, insuring beans are heated and stirred into other ingredients. Precooked macaroni or spaghetti may be added to chili at time of serving, or may be mixed into other ingredients before serving. Serves 8 to 10 or six hungry farmers.
