T'S SCREAMING CHILI | |
4 lbs. coarse ground beef 1 lg. red onion 2 fresh cloves of garlic 1 tsp. oregano 1 tsp. cumin seed 2 tsp. dried jalapeno peppers 6 tsp. New Mexico chili powder 2 c. tomato or "Snappy Tom" juice 2 c. water 2 sm. pieces of Hershey chocolate 1/2 lb. pinto beans Divide the ground beef into 2 cast iron skillets. Divide into the skillets the following ingredients: red onion, garlic, oregano, cumin seed, jalapeno peppers, chili powder. Mix well and cook on high heat until beef is thoroughly browned. Add the tomato juice and water. Bring to a boil, then let simmer for approximately 1 hour. During this time, add the chocolate to take away any bitter taste. Also salt and pepper to taste. Put the pinto beans on to boil. When the beans are approximately 2/3 done, add the contents of both skillets to the beans. Let boil until done, then simmer for 30 minutes. Adjust any or all ingredients for taste and spiciness. |
