BREAKFAST CASSEROLE 
11 slices bread
8 eggs
4 c. milk
1 1/2 c. Cheddar cheese
1 1/3 tsp. dry mustard
2 tbsp. chopped onion (optional)
Diced ham or 10 slices bacon, fried and crumbled (optional)
Mushrooms, drained (optional)
Green peppers, diced (optional)

Remove crusts from the bread and cut into 1/2 inch cubes. Grease 9x13 inch glass pan and place half the bread chunks in it. At this point, onion, ham, bacon, mushrooms, or green pepper can be added. Then add 1 1/2 cups Cheddar cheese and cover with remaining bread crumbs.

Beat eggs with dry mustard and add milk, stir and pour over other ingredients. Refrigerate overnight and bake 45-60 minutes in 350 degree oven. When a knife inserted in the middle comes out clean, it is done. If a glass pan can't be used, bake at 375 degrees.
