CHICKEN CACCIATORE IN 20 MINUTES 
1 lb. boneless chicken strips
1/2 c. chopped onion
1 garlic clove, minced
2 tbsp. oil
28 oz. can tomatoes (or
use 16 oz. jar spaghetti sauceand 1 1/4 c. water and omit
canned tomatoes, tomato sauce
and salt)
8 oz. can tomato sauce
1 tsp. salt
1/2 tsp. oregano
1/2 tsp. basil
1/8 tsp. ground red pepper
1 c. green pepper strips
1 1/2 c. Minute Rice

Brown chicken, onion and garlic in oil. Add tomatoes, tomato sauce, seasonings and ground pepper. Bring to a full boil. Stir in rice. Cover, remove from heat. Let stand 5 minutes. Stir before serving. Makes 4 servings.
