SPINACH SHELLS 
8 oz. frozen chopped spinach, cooked, well-drained
8 oz. Mozzarella cheese
8 oz. Ricotta cheese
2 eggs
1/4 c. Parmesan cheese
1 bay leaf
Sprinkle of thyme
Sprinkle of rosemary
Sprinkle of oregano

Cook jumbo shells; set aside. Grate Mozzarella cheese; mix with Ricotta cheese, Parmesan cheese, 2 eggs, spices according to taste. Mix in drained spinach.

Fill shells with mixture. Cover with spaghetti sauce. Bake at 350 degrees for approximately 35 minutes or until done.

If on a diet, substitute Ricotta and Mozzarella cheese made with skim milk. Use 2 egg whites and 4 teaspoons of vegetable oil in place of eggs.
