HOT RICE DISH 
2 c. old fashion rice
3 lg. tbsp. butter
1 tbsp. soy sauce
1 c. carrots, diced
1 c. celery, diced
1 c. green pepper
1 lg. onion

Saute vegetables in butter and soy sauce until desired tenderness. As you saute vegetables, cook rice until tender, but don't let it thicken. Drain and rinse rice. Add buttered vegetable to rice; add salt and pepper to taste. If mixture seems a little dry, just melt a little bit more butter and add.
