PEANUT DRESSING 
Peanut dressing is over 100 years old. It first appeared in a Charleston Cookbook, the added peanuts give the dressing a very unique flavor.

1 c. shelled peanuts, parched
2 c. ground cornmeal
2 tbsp. butter
1 egg
Broth from baked turkey or chicken
Salt and pepper

Grind peanuts. To this add cornmeal crumbs and mix well. Moisten with the amount of broth needed, then add butter, egg, salt and pepper. Stuff turkey or hen and bake as usual. This can also be baked in a separate dish at 400 degrees for approximately 30 minutes.
