3 eggs
2 c. sugar
1/2 c. oil
1 tsp. vanilla
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt (optional)
3/4 c. chopped nuts
4 c. diced apples

Beat first 4 ingredients (eggs, sugar, oil and vanilla). Add dry to wet and mix well. Add 3/4 cup chopped nuts and diced apples with skins on. Pour into greased, floured 14 x 9 inch pan. Bake in preheated oven at 350 degrees for 45 minutes. Frost with cream cheese frosting when cool. Note: For wheat allergies oat flour may be used but may require 3 cups instead of 2.

FROSTING:

8 oz. soft cream cheese
1 1/2 c. powdered sugar
1 tsp. vanilla

Mix well.
