CHICKEN ARTICHOKE CASSEROLE 
3 lbs. cut up fryer
1-1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
6 tbsp. butter
1/4 lb. mushrooms, cut in lg. pieces
12 or 15 oz. jar of artichoke hearts, drained thoroughly & blotted dry
2 tbsp. flour
2/3 c. chicken consomme or bouillon
3 tbsp. cooking sherry

Salt, pepper, and paprika the chicken pieces. Then brown in flour and 1 tablespoon of the butter. Then place the chicken in a large casserole dish. Put 2 tablespoons of the butter in a frying pan and saute the mushrooms for 5 minutes. Then sprinkle flour over them and stir in the chicken consomme and the sherry. While this cooks 5 minutes get artichokes ready and arrange them between the chicken pieces. Then pour mushrooms and sherry sauce over them. Cover and bake 375 degrees for 45 minutes. Can make ahead.
