BROCCOLI MOUSSE 
2 tbsp. butter
1 sm. onion, chopped
3 tbsp. flour
2 pkg. chopped broccoli, may use fresh
4 eggs, beaten
1 (8 oz.) jar Cheez Whiz

Cook broccoli; drain but save 2/3 cup liquid or use chicken broth. Melt butter in frying pan, saute onion. Add flour and make a paste, then gradually add reserved liquid or chicken broth and blend thoroughly. Add jar of Cheez Whiz until melted into a cream sauce. Add broccoli to beaten eggs; add cream sauce. Pour into casserole. Bake at 350 degrees for 30 minutes.
