PORK ROAST 
Loin or rib roast (1/2 lb. per person)
Salt and pepper
1/2 c. light brown sugar firmly packed
2 tbsp. corn starch
1/4 tsp. ginger
1 (1 lb.) can chunk pineapple in its own juice
2 tbsp. lemon juice
1/2 c. orange juice
1/2 c. sherry

Preheat oven to 325 degrees. Season pork with salt and pepper. Bake allowing 35 to 45 minutes per pound. In saucepan, combine brown sugar, cornstarch and ginger. Add remaining ingredients. Bring to a boil. During last 15 minutes of cooking the roast, remove excess fat from bottom of pan and pour sauce over roast. Stir well and return roast to oven for final cooking time.
