BATTER FOR FRYING VEGETABLES 
1 c. flour
1 1/2 tsp. salt, divided
1 egg
1 c. cracker meal
1/2 tsp. pepper
1 c. buttermilk

Combine flour, meal, 1 teaspoon salt and pepper in a shallow dish. Combine egg, buttermilk and 1/2 teaspoon salt in another dish. Add a portion of vegetables to egg mixture and remove with a slotted spoon, then place in flour mixture. Stir to coat. Fry in oil. Coats one pound of cut vegetables.
