MEXICAN EGGS 
2 (4 oz.) cans diced minced green chili peppers
8 oz. Cheddar cheese, grated
2 c. milk
1 c. Bisquick
4 slightly beaten eggs
1 c. cottage cheese
Salsa

Spray a 9 x 12 glass pan with non stick and cooking spray. Layer: chili peppers, cheese. Mix Bisquick, milk and eggs until smooth. Add cottage cheese. Pour over layered cheese and chili peppers. Bake at 350 degrees for 45 minutes. Check center with knife let stand 10 minutes. Serve with salsa on the side and corn bread.
