MAPLE CANDIED SWEET POTATOES 
3 lb. sweet potatoes
1/2 cup maple syrup (or flavored syrup)
1/2 cup brown sugar, packed
2 tbsp. butter
1/2 tsp. salt

Cook sweet potatoes in boiling, salted water until tender, about 30 to 40 minutes; drain and peel. Canned sweet potatoes are fine, just eliminate the boil step. Cut sweet potatoes into 1-inch slices.

In a saucepan, combine maple or maple flavored syrup, brown sugar, butter and salt. Bring to full boil, then simmer for 5 minutes.

Place sweet potatoes in 11 x 7 1/2 x 1 1/2-inch baking pan. Spoon syrup mixture over potatoes to coat.

Bake, uncovered, at 350°F for 30 minutes, basting potatoes frequently.

Makes 8 to 10 servings.
