FLUFFY POTATO CASSEROLE 
3 c. hot or cold mashed potatoes, about 8 potatoes
1 (8 oz.) pkg. cream cheese
1 sm. onion, chopped
2 eggs
2 tbsp. flour
Salt & pepper to taste
1 (3 1/2 oz.) can French fried onion rings

1. Put potatoes in large bowl. Add cheese, onion, eggs and flour.

2. Beat at medium speed until blended, then at high speed until light and fluffy.

3. Taste and add salt and pepper to taste.

4. Spoon into greased baking dish (9 inch square).

5. Sprinkle canned onions evenly over the top.

6. Bake at 300 degrees for 35 minutes uncovered.

If you prepare ahead, add onions on top just before putting in oven. Serves 8. Recipe may be doubled. Use a 9 x 13 inch baking dish and bake 1 hour and 10 minutes. Cover with foil if onions start to brown.
