GINGER CHICKEN (GOOD HOT OR
COLD)
 
2 lbs. boneless skinned chicken, cut into short strips
2 tbsp. chopped fresh ginger
1 tsp. garlic powder
1/2 c. soy sauce (not LaChoy)
2 tbsp. peanut oil for frying and 1 tsp. butter

Mix and marinate chicken at least 2 hours. Heat peanut oil in fry pan; add butter. Stir fry chicken about 5 minutes or until done. Add fresh mushrooms if you wish.
