SWEET-POTATO PONE 
Sweet-Potato Pone is an adaptation of an Indian dish made from grated sweet potatoes and honey. It can be fancy with eggs and a variety of spices, or plain with just sweet potatoes and sugar or syrup. This simple version is very similar to the pone made by the Indians. It makes a good side dish with ham or pork chops, and is even good for dessert with whipped cream. Makes 6 servings.

4 c. coarsely grated sweet potatoes
1/2 c. water
1/4 c. light brown sugar
1/2 tsp. salt
1/4 tsp. ground ginger
1 tbsp. melted butter
3/4 c. honey or dark corn syrup

1. Heat oven to 350 degrees. In a large bowl combine sweet potatoes, water, brown sugar, salt, ginger, and butter.

2. Generously grease a 1 1/2 quart shallow baking dish. Spoon sweet-potato mixture into dish. Bake until potatoes are tender - about one hour. Drizzle with honey and bake 15 minutes longer. Serve hot, or cool to room temperature. Serve with whipped cream for dessert.
