MANDARIN ORANGE AND ALMOND SALAD 
1 tsp. sugar
1 tsp. water
1/2 c. slivered almonds
8 c. lettuce, torn into bite size pieces (Romaine, Bibb, iceberg, or mixture)
1 c. chopped celery
2 green onions, chopped
2 (11 oz.) cans mandarin oranges, drained
Sesame oil and vinegar dressing
1/2 tsp. salt
4 tbsp. sugar
4 tbsp. white vinegar
1/8 tsp. pepper
1/2 c. sesame oil

Mix sugar and water with almonds; spread in microwave dish. Microwave on high for 1 minute. Stir. Again for 1 minute; stir. Continue until almonds are browned. Mix lettuce, celery and onion; add oranges, almonds. Pour dressing and toss.

DRESSING:

Combine salt, pepper, sugar and vinegar and oil. Microwave on medium (70 percent power) for 1 minute to dissolve sugar. Cool. Dressing will keep up to 2 days in refrigerator.

Since microwave ovens vary in power, you may need to adjust your cooking time.
