PINEAPPLE BREAD 
1/3 c. shortening
1/3 c. granulated sugar
2 eggs
1 c. crushed pineapple and juice
1 1/2 tsp. vanilla
2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. chopped nuts

Cream shortening; add sugar gradually, beating in well. Add unbeaten eggs one at a time, beating well after each addition. Add pineapple and mix well. Sift together flour, baking powder, salt and soda. Stir into pineapple mixture. Add vanilla. Add nuts and mix well. Pour into greased loaf pan. Bake in moderate oven at 350 about one hour. Makes one loaf.
