PINEAPPLE NUT BREAD | |
1 1/3 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 3/4 c. sugar 3 tbsp. butter 2 eggs 3/4 c. chopped nuts 1 c. crushed pineapple, undrained 2 tbsp. sugar 1/2 tsp. cinnamon Combine flour, baking powder, salt and baking soda. In a mixing bowl, cream 3/4 cup sugar into butter. Add eggs, 1 at a time, beating well after each addition. Sift in about half the flour mixture. Stir just until dry ingredients are moistened. Add pineapple. Then stir in remaining flour mixture. Spoon batter into a greased 9 inch loaf pan. Combine 2 tablespoons sugar and cinnamon. Sprinkle over batter. Bake at 350 degrees for 60 to 70 minutes. Yield: 1 loaf. |
