CHICKEN IN BRANDY 
8 med. chicken breasts
1/2 lb. butter
1 c. heavy cream
Salt and pepper
1 1/2 c. brandy
1 lg. can mushrooms

Wash chicken and sprinkle with salt and pepper. Mix butter in electric fry pan or heavy skillet. Brown chicken on both sides. Pour in brandy, cover, reduce heat; simmer for 45 minutes or until tender. Add mushrooms and heavy cream 10 minutes before serving - continue to simmer. Elegant!! Best served over Rice Pilaf.
